Susie Q's collaborated with the team at Tapatio to create a vegetarian burger recipe with our pinquito beans and pinquito bean seasoning. Our goal was to create the best veggie burger recipe - full of flavor and packed with protein.
Ingredients
Patties
2 cups Pinquito Beans, prepared with Pinquito Bean Seasoning
2 tablespoons olive oil
1 small yellow onion, finely chopped
1 small jalapeno pepper, deseeded and diced
1 garlic clove, finely chopped
1 large egg
1/2 cup all purpose flour (can be replaced with gluten free flour)
Burger assembly (feel free to personalize)
Your favorite hamburger buns
roasted Red Peppers, to top
yellow onions, caramelized
Guacamole
Tapatio Hot Sauce
Prep Directions
Step 1: Prepare pinquito beans according to package directions

Step 2: When your pinquito beans are cooked, use a strainer to rinse well, then pour into a medium sized mixing bowl.
Step 3: Smash the beans with either a mortar and pestle or quickly in a food processor along with some olive oil. Then transfer to a bowl.
Step 4: Chop onion, garlic, pepper and add into the bowl
Step 5: Add remaining olive oil
Step 6: Pour in flour
Step 7: Crack in egg
Step 8: Optional: add salt and pepper or Susie Q's Santa Maria Style Seasoning
Step 9: With a rubber spatula, mix everything around really well - getting the egg blended and flour mixed in.
Cooking Instructions:
Heat a cast iron skillet or frying pan over medium heat and add some olive oil.
When the pan is hot, scoop bean mix with your hands, forming a small ball.
Place it into the pan and give it a gentle press with your spatula forming it into a burger.
Cook on each side for about 5 minutes.
These are a lot more dense than your beef burger and will need more time to cook through. When they are cooked well and golden brown on each side take them off the heat.
Grab your buns and begin making your burger.
Place some roasted red peppers down on the bun first, then the burger, then your guacamole, followed by the caramelized onions. Then put the bun top on.
Serve them right away while they are still nice and warm.
