Few foods are more picnic-friendly than sandwiches, but if you’re looking to step outside of the box, then give these stuffed picnic rolls a try! These perfectly portable bundles of flavor can be made ahead of time and frozen to save time. An easy meal that packs a punch.
Ingredients:
- 1 lb. ham
- 1 green bell pepper
- 1 yellow onion
- 3 dill pickles
- 1/2 lb. cheddar or longhorn cheese
- 1/2 cup vegetable oil
- 1/4 cup ketchup
- 1 tsp. Susie Q's Santa Maria Style Seasoning
- 1 bag small French rolls
Directions:
- Pulse the ham, green pepper, onion, and pickles in a food processor until coarsely ground. Transfer to a large bowl.
- Grate the cheese and add to the bowl. Stir in the vegetable oil, ketchup and Susie Q's seasoning. Mix until well combined.
- Slice the tops off of the rolls and set aside. Hollow out the rolls and stuff with the ham mixture. Replace the tops and place the stuffed rolls in a baking dish. (Rolls can be frozen at this point.)
- Bake at 350°F for about 20 minutes, until hot and bubbly.
