This tomato sauce recipe brings new life to traditional marinara. Roasting the tomatoes intensifies the flavors and leaves you with a rich sauce that tastes like it’s been simmering on the stove all day. This sauce can be canned or frozen and used year-round in pasta dishes, pizzas, egg dishes, etc.
Ingredients:
- 8 lbs. ripe tomatoes, quartered
- 8 large onions, quartered
- 5 cloves garlic, minced
- 10 cloves garlic, whole
- 2 cups fresh whole herbs (Any combination of Italian flat leaf parsley, rosemary, oregano, basil, thyme, chives or other fresh herbs of your choice.)
- 1/4 cup olive oil
- 2-3 tsp. Susie Q’s Santa Maria Style Seasoning
Directions:
- Preheat oven to 450°F.
- Combine all of the ingredients in a large roasting pan.
- Roast for 1/2 hour, gently stir, and continue roasting for 1 1/2 hours, stirring 2-3 times. The tomatoes should begin to breakdown into a sauce and the surface should begin to caramelize.
- Remove from the oven and remove any woody herb stems. Taste and season with additional Susie Q's seasoning, if desired.
- Transfer to a food processor or blender and blend until desired consistency is reached.
Makes about 10 cups.
