Rustic Roasted Tomato Sauce

This tomato sauce recipe brings new life to traditional marinara. Roasting the tomatoes intensifies the flavors and leaves you with a rich sauce that tastes like it’s been simmering on the stove all day. This sauce can be canned or frozen and used year-round in pasta dishes, pizzas, egg dishes, etc.

Ingredients: 

  • 8 lbs. ripe tomatoes, quartered
  • 8 large onions, quartered
  • 5 cloves garlic, minced
  • 10 cloves garlic, whole
  • 2 cups fresh whole herbs (Any combination of Italian flat leaf parsley, rosemary, oregano, basil, thyme, chives or other fresh herbs of your choice.)
  • ¼ cup olive oil
  • 2-3 tsp. Susie Q’s Santa Maria Style Seasoning

Directions: 

  1. Preheat oven to 450°F. 
  2. Combine all of the ingredients in a large roasting pan. 
  3. Roast for ½ hour, gently stir, and continue roasting for 1 1/2 hours, stirring 2-3 times.  The tomatoes should begin to breakdown into a sauce and the surface should begin to caramelize.
  4. Remove from the oven and remove any woody herb stems. Taste and season with additional Susie Q's seasoning, if desired. 
  5. Transfer to a food processor or blender and blend until desired consistency is reached. 

Makes about 10 cups.
