Grilled Corn Salad

Grilling corn brings out its natural sweetness and imparts a rich, smoky flavor. The next time you have the grill heated up, throw on a couple ears of corn and give this recipe a try! A few simple ingredients tossed in a light dressing make this grilled corn salad a healthy and delicious summertime side dish. 


10 oz. of your favorite fresh vegetables (bell peppers, onions and/or mushrooms work best)
2 ears grilled corn
1 Roma tomato, diced
1 tbsp. olive oil
1 lime, juiced
1 tsp. Susie Q’s Santa Maria Style Seasoning
1 tbsp. finely chopped cilantro


  1. Dice the vegetables. 
  2. Cut corn from cob. 
  3. Combine the diced vegetables, corn, and remaining ingredients in a large bowl. 
  4. Cover and refrigerate until ready to serve.
