Almond Chicken Salad

This refreshing chicken salad makes a wonderful lunch that you can feel good about eating. Chock full of fresh fruit and crunchy almonds, this recipe uses no mayonnaise! Instead, we’ll dress everything with a delicious combination of oil, vinegar and our Santa Maria Style Seasoning for a zesty kick.

Ingredients:

  • 2 pomegranates, deseeded
  • 1/2 cup golden raisins
  • 1 lb. cooked chicken breast (cut into 1” chunks)
  • 1/3 cup sliced almonds, toasted
  • 1 apple, diced
  • 1/2 cup thinly sliced celery
  • 1 tbsp. chopped Italian parsley
  • 1/4 cup thinly sliced green onions
  • 1/4 to 1/2 tsp. curry powder (optional)
  • 1/3 cup extra-virgin olive oil
  • 3 tbsp. balsamic vinegar
  • Susie Q's Santa Maria Seasoning

Directions:

  1. In a large mixing bowl, combine the pomegranate arils (seeds), raisins, chicken, almonds, apple, celery, parsley, green onions and curry powder. 
  2. In a small bowl, whisk together the olive oil and balsamic vinegar. Pour over the chicken mixture and toss until well coated. 
  3. Season with Susie Q's Santa Maria Seasoning to taste and refrigerate until ready to serve.
