OAK-GRILLED COWBOY CAVIAR

Ingredients:

  • 2 cups fresh corn kernels (cooked and cut from cob)
  • 2 cups prepared Susie Q's Pinquito Beans, rinsed
  • 1-1/2 cups diced Roma tomatoes, seeds removed
  • 1/2 red onion, diced
  • 1 fresh jalapeno pepper, seeded and diced
  • 1 yellow or orange bell pepper, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp. Susie Q's Santa Maria Seasoning
  • ½ tsp cumin, ground
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Tapatio sauce

Directions:

  1. Mix all ingredients in a large bowl.
  2. Cover and refrigerate for at least 2 hours to meld the flavors.
  3. Stir well before serving.
  4. Enjoy with tortilla, corn, or pita chips.
