- 2 cups fresh corn kernels (cooked and cut from cob)
- 2 cups prepared Susie Q's Pinquito Beans, rinsed
- 1-1/2 cups diced Roma tomatoes, seeds removed
- 1/2 red onion, diced
- 1 fresh jalapeno pepper, seeded and diced
- 1 yellow or orange bell pepper, seeded and diced
- 1/4 cup fresh cilantro, chopped
- 1 tbsp. Susie Q's Santa Maria Seasoning
- ½ tsp cumin, ground
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp Tapatio sauce
- Mix all ingredients in a large bowl.
