Enjoying roasted vegetables has never been easier or more flavorful! No need to heat up the oven, just toss the veggies on the grill alongside ribs, steaks or chicken and consider your cookout complete. This toughest part of this recipe will be deciding which veggies to use!
- 1-2 tbsp. Susie Q's Santa Maria Seasoning
- 1½ lbs. assorted fresh vegetables, cut into chunks. (Mushrooms, carrots, celery, zucchini, bell peppers, yellow squash, sweet potatoes, asparagus and grape tomatoes are suggestions.)
- 1-2 tbsp. olive oil
- Place all ingredients in a large foil bag. Shake or toss bag until vegetables are well coated.
- Place bag on preheated BBQ grill and cook for 20 minutes, until vegetables are tender.
