10 oz. of your favorite fresh vegetables (bell peppers, onions and/or mushrooms work best)
2 ears grilled corn
1 Roma tomato, diced
1 tbsp. olive oil
1 lime, juiced
1 tsp. Susie Q’s Santa Maria Style Seasoning
1 tbsp. finely chopped cilantro
- Dice the vegetables.
- Cut corn from cob.
- Combine the diced vegetables, corn, and remaining ingredients in a large bowl.
- Cover and refrigerate until ready to serve.
