Stuffed Picnic Rolls

Few foods are more picnic-friendly than sandwiches, but if you’re looking to step outside of the box, then give these stuffed picnic rolls a try! These perfectly portable bundles of flavor can be made ahead of time and frozen to save time. An easy meal that packs a punch.

Ingredients: 

  • 1 lb. ham
  • 1 green bell pepper
  • 1 yellow onion
  • 3 dill pickles
  • ½ lb. cheddar or longhorn cheese
  • ½ cup vegetable oil
  • ¼ cup ketchup
  • 1 tsp. Susie Q's Santa Maria Style Seasoning
  • 1 bag small French rolls

Directions: 

  1. Pulse the ham, green pepper, onion, and pickles in a food processor until coarsely ground.  Transfer to a large bowl. 
  2. Grate the cheese and add to the bowl.  Stir in the vegetable oil, ketchup and Susie Q's seasoning.  Mix until well combined.  
  3. Slice the tops off of the rolls and set aside. Hollow out the rolls and stuff with the ham mixture. Replace the tops and place the stuffed rolls in a baking dish. (Rolls can be frozen at this point.)
  4. Bake at 350°F for about 20 minutes, until hot and bubbly.
